Hardened with CRYODUR to 63 Rockwell, it offers long-lasting sharpness and resistance. Its symmetrical Honbazuke edge and Japanese profile allow for precise cuts in meat, vegetables, and fruit. The Masur birch “D” handle provides balance and control.
